About Phở Thìn
Phở Thìn opened at 13 Lò Đúc in 1979, when Hanoi was still on its rationing economy and most pho shops served broth-and-noodle only. The founder, Mr Bùi Chí Thìn, introduced a wok-finishing technique that became his shop's signature: sliced beef tossed with garlic in a smoking-hot iron wok for 8 seconds before being dropped into the bowl, where the residual wok smoke perfumes the broth. The dish — phở bò tái lăn — was unique enough to enter Hanoi's pho vocabulary as a category of its own. The shop has stayed at the same 13 Lò Đúc address for 47 years, still run by direct descendants of Mr Thìn.

I've been eating at Phở Thìn since 2011 — the year I moved back to Hanoi after 8 years abroad. My uncle took me here on my second day home and ordered me phở bò tái lăn — the stir-fried beef pho they invented. The technique is wild: thinly sliced beef gets tossed with garlic in a smoking-hot wok before being dropped into the bowl with the broth. You get this charred-edge beef that ordinary pho doesn't have, plus the wok smoke perfumes the whole soup.
The shop is at 13 Lò Đúc, a 5-minute walk south of Hoan Kiem Lake. It's been here since 1979. Inside is two cramped floors of plastic stools, fluorescent lights, no decor whatsoever — exactly what an old Hanoi pho place should be. Don't expect English menus. Don't expect smiles. The staff are professionally efficient and will get annoyed if you ask too many questions during the 7am rush.
What you order: phở bò tái lăn, large size, with extra herbs. 80,000 VND. Cash only. You sit, you eat in 10 minutes, you leave. There's no website, no Instagram, no reservations. This is the kind of place that exists despite the modern world, not because of it.
