About Phở Thìn

Phở Thìn opened at 13 Lò Đúc in 1979, when Hanoi was still on its rationing economy and most pho shops served broth-and-noodle only. The founder, Mr Bùi Chí Thìn, introduced a wok-finishing technique that became his shop's signature: sliced beef tossed with garlic in a smoking-hot iron wok for 8 seconds before being dropped into the bowl, where the residual wok smoke perfumes the broth. The dish — phở bò tái lăn — was unique enough to enter Hanoi's pho vocabulary as a category of its own. The shop has stayed at the same 13 Lò Đúc address for 47 years, still run by direct descendants of Mr Thìn.

What separates Phở Thìn from Hanoi's other flagship pho stops — Phở Bát Đàn (1976 · chicken pho specialist · 50,000 VND) · Phở 10 Lý Quốc Sư (tourist-popular · multi-meat) · Phở Sướng (family-style · richer broth) — is the singular focus on the stir-fried-beef preparation. They don't serve chicken pho. They don't serve other beef cuts. The phở bò tái lăn at 80,000 VND IS the menu. This specialist discipline is rare even among Hanoi's old-school institutions.

We include Phở Thìn in our Hanoi Old Quarter Food Tour because the technique is visible (you watch the wok step from your stool), the queue moves fast (~10 minutes during peak), and the staff handle small groups without disruption to their morning rhythm. The 5-minute walk south of Hoan Kiem makes it accessible from any Old Quarter hotel. For solo travelers and couples, the upstairs floor gives breathing room during 7am-8am breakfast peak.

Robert's take

Robert Nguyen

I've been eating at Phở Thìn since 2011 — the year I moved back to Hanoi after 8 years abroad. My uncle took me here on my second day home and ordered me phở bò tái lăn — the stir-fried beef pho they invented. The technique is wild: thinly sliced beef gets tossed with garlic in a smoking-hot wok before being dropped into the bowl with the broth. You get this charred-edge beef that ordinary pho doesn't have, plus the wok smoke perfumes the whole soup.

The shop is at 13 Lò Đúc, a 5-minute walk south of Hoan Kiem Lake. It's been here since 1979. Inside is two cramped floors of plastic stools, fluorescent lights, no decor whatsoever — exactly what an old Hanoi pho place should be. Don't expect English menus. Don't expect smiles. The staff are professionally efficient and will get annoyed if you ask too many questions during the 7am rush.

What you order: phở bò tái lăn, large size, with extra herbs. 80,000 VND. Cash only. You sit, you eat in 10 minutes, you leave. There's no website, no Instagram, no reservations. This is the kind of place that exists despite the modern world, not because of it.

I've taken my mother here. I've taken every important guest here. I've eaten breakfast here probably 200 times. If you have one phở meal in Hanoi, make it this one.

How to order like a local · Robert's tips

The staff at Phở Thìn move at Hanoi morning speed. They are not rude, they are efficient. Treat the transaction like the locals do: know what you want, say it cleanly, eat fast, leave cash.

🗣 What to say
Walk in, point at an empty stool, sit. When the runner comes (within 30 seconds): say "phở bò tái lăn" — that's it. They'll bring it in 4 minutes.
"Cho em một bát phở bò tái lăn"
📏 Size choice
No menu, but there are two sizes. Default is regular (60K). For Robert-size, say "bát to" (BAT toh) = large (80K). Big eaters always go large.
"Bát to · extra herbs"
🌿 Herbs & lime
Herb plate comes with basil + fresh lime + raw chili. Northern pho does NOT use bean sprouts · if you ask for them you'll get a confused look. Squeeze lime, tear basil, eat fast before noodles bloat.
🪑 Seating tip
Upstairs second floor has fewer people + AC during summer. Ask "trên lầu" (TREN low) for upstairs · staff will point you to the narrow stairwell.
"Trên lầu được không?"
💵 Paying
No tip. No card. Service charge is built in. When done, walk to the cash counter (front of shop, near the wok), say the price out loud (60K or 80K). They trust you. No receipt.
⏱ When to come
6:30am-8am is the breakfast peak (15-20 min wait standing). Sweet spots: 5:45am (open + nearly empty) OR 2:30pm (post-lunch lull). Avoid 7am-8:30am unless you enjoy queueing.

Common tourist mistakes

Don't ask for bean sprouts.
Northern Hanoi pho doesn't use them. The southern bean-sprout style is a Saigon thing. Stick to basil + fresh lime.
Don't arrive at the lunch rush.
12-1pm = 30+ min wait. Hit it at 11am or 2pm instead. Or go 5:45am if you're jet-lagged anyway.
Don't pay with card or QR.
Cash only. VND only. The closest ATM is 50m down Lò Đúc street (Vietcombank green sign). Bring 100K notes.
Don't sit at the outdoor plastic chairs in summer.
Upstairs has AC and the same menu. The outdoor "vỉa hè" stools are 36°C + humid + scooter exhaust in July-August.

FAQ

Can I book in advance?
No. Phở Thìn is walk-in only. There is no phone, no email, no OpenTable, no online booking. You queue or you don't eat. The queue moves fast (~10 min during peak).
Do they take card?
No. Cash only · VND only. The closest ATM is a Vietcombank 50m south on Lò Đúc street (green sign). Bring 100K notes — they'll have to make change for larger bills.
Is it kid-friendly?
Yes for kids 6+ who can handle hot broth and a busy environment. Plastic stools are kid-sized. Mild dishes (phở bò chín with no chili) work fine. Avoid the 7am breakfast rush with toddlers.
Vegetarian options?
Not really. The broth is beef-bone-based · they don't do a vegetarian version. Side: quẩy (fried Chinese cruller · vegetarian) + trà đá (iced tea). For vegetarian Hanoi pho, walk 15 min to Aubergine Phở Chay on Lương Văn Can.
What makes Phở Thìn special?
They invented stir-fried-beef pho (phở bò tái lăn) in 1979. The technique — flash-searing beef in a smoking-hot wok with garlic before dropping into the bowl — is now copied by pho shops worldwide. Original here · still run by the same family.
How do I get there from the Old Quarter?
5-min walk south of Hoan Kiem Lake. From Hoan Kiem southeast corner (near the red Huc Bridge), walk south on Đinh Tiên Hoàng → Lê Thái Tổ → Bà Triệu → turn left on Lò Đúc. Address: 13 Lò Đúc, Hai Bà Trưng District. Grab/taxi from anywhere in central Hanoi: 25-35K VND.
What time is least crowded?
Sweet spots: 5:45am (just-opened, nearly empty, full broth strength) OR 2:30pm (post-lunch lull). Worst times: 7am-8:30am (breakfast peak · 15-20 min wait) and 12-1pm (lunch peak · 30+ min). Sunday mornings are quieter than weekdays.
Can ATL arrange a food tour that visits Phở Thìn?
Yes. Hanoi Old Quarter Food Tour includes Phở Thìn as Stop 2 alternative (depending on day · we rotate Phở Thìn ↔ Phở Bát Đàn to spread guest load). Tour is Robert-led, max 8 pax, evening start. Want a private morning-pho-only walk? WhatsApp Robert.
