Hanoi's Old Quarter — 36 streets, each historically named for the craft once sold there — is one of the great street-food cities of Asia, and the food that matters is on plastic stools down lanes, not in restaurants. On this evening walk a local guide takes you to the spots residents actually queue for: phở gà, bún chả, egg coffee and the beer corner, at a pace that lets you finish each dish.

You walk roughly 2.5km at conversational pace through the lit-up lanes, stopping at family stalls that have been cooking the same dish for decades — the 50-year phở counter on Bát Đàn, the bún chả corner made famous by Obama and Bourdain at Hương Liên, the plastic-stool bia hơi on Tạ Hiện, and Café Giảng, the café that invented cà phê trứng (egg coffee).
